Easter carrot cake cupcakes

These cute carrot cake cupcakes will look lovely on the table for an afternoon Easter treat with the family, or as a desert if you haven't indulged in to much food at dinner time. They are simple and quick to make and taste delicious.

I took the recipe from the Tesco website.
You will need |
3 medium sized carrots, peeled and grated
150g of self raising flower 
80g of unsalted butter 
2 medium eggs 
100g of brown sugar 
1 tsp of ground cinnamon 
Half a tsp of bicarbonate of soda 
2 medium eggs 
A pinch of salt 
80g of golden syrup
Cream cheese icing 
Mini eggs 

How to |

Step 1 | Preheat your oven to180 degrees and line your baking tray with10 bun cases.

Step 2 | Place the butter, sugar and golden syrup in a large pan, put on a medium heat and melt all the ingredients together. 

Step 3 | Once the ingredients have combined remove the pan from the heat and add the flour, salt, bicarbonate of soda, ground cinnamon, grated carrot and eggs to your mixture. Mix well together until you have a smooth batter. It doesn't look like very nice but the end result is delicious.

Step 4 | Spoon your mixture into your bun cases and place in the oven for 20-25 minutes until a cake tester comes out clean from the centre of the cakes. Once cooked leave to cool. 

Step 5 | For the topping I cheated and bought a cream cheese frosting from Aldi, I just spooned it into a piping bag and squeezed it onto the top of my cakes.
