For the cupcakes |
  • 3 brambly cooking apples, peeled, cored and roughly chopped.
  • 3 the spoons of caster sugar.
  • 1 table spoon of water.
  • 1 tea spoon of vanilla extract.
  • 115g unsalted butter.
  • 150g dark brown sugar.
  • 100g caster sugar.
  • 2 large eggs.
  • 1 teaspoon vanilla extract.
  • 225g plain flour.
  • 1 1/2 tablespoons of baking powder.
  • 1 1/2 tablespoons of cinnamon.
  • 1/2 tablespoon of salt.
For the toffee, cream cheese frosting |
  • 120g unsalted butter.
  • 120g dark brown sugar.
  • 120ml double cream.
  • 500g icing sugar.
  • 280g cream cheese.
Instructions |

1) In a pan gently heat the apple, sugar, vanilla and water on a medium heat. Stir occasionally untill the apple is soft and leave to cool.

2) Preheat the oven to 170c and prepare a 12 hole muffin tray with cases.

3) Place the butter, brown and white sugar in a bowl and mix using an electric whisk. Once light and fluffy add the Two eggs and vanilla extract, beat well until fluffy and combined.

4) In a medium bowl, mix together the flour, baking powder, cinnamon and salt until well combined.

5) Add a third of the dry ingredients to the butter mixture until just combined, then add half the apple mixture until just combined. Repeat and finish by adding the final third of the dry ingredients.

6) Spoon the batter into the prepared cases, bake in the oven for 25-30 minutes then leave to completely cool.

7) While the cupcakes are baking you can make the toffee sauce for the frosting. Melt the butter and sugar together in a pan in a low heat, stirring continuously until the butter has melted and the sugar dissolved. Heat until the mixture starts to bubble up. Add the cream and stir until combined. Leave to completely cool.

8) To make the frosting, pour 3/4 of the toffee sauce into a bowl. Use an electric mixer on a low speed and beat in the sugar 1/3 at a time until combined and smooth. Add the cream cheese and beat in a high speed until it is light and fluffy.

9) Using a piping bag swirl the frosting on top of the cakes and drizzle the left over toffee sauce on top. Add any other decorations you would like.

10) ENJOY!
